Tie Guan Yin also known as Hongxin Guanyin and Hongyang Guanyin. Anxi Tie Guan Yin is an oolong tea made with the fresh leaves of the Tie Guan Yin tea trees growing in Anxi country of Fujian Province. The area has clear springs flowing all the year round. The high mountains in the area always covered with clouds and mists. The humid and warm climate and plenty of rainfall in the area are good for the growth of the oolong tea trees. Tea planting in Anxi started at the end of the Tang Dynasty(618-907) .

 

Anxi Tie Guan Yin can be picked four to five times a year and made into spring tea,summer tea, midsummer tea, autumn tea, and winter tea. The spring tea is the best while the autumn tea the second best. Tea quality also depends on the weather. The tea picked on sunndy days is the best, followed by those picked on cloudy days and rainy days.

 

Anxi Tie Guan Yin oolong tea is seen as curly strips covered with white hairs. The tea strips are fat and round tiwh fresh and moist red spots on green background. It seems to have the green dragonfly head, spiral body, and frog leg. The tea soup is golden as amber and sends forth natural rich orchid fragrance. It tastes mellow, sweet, and fresh, with long-lasting sweet aftertaste. The tea has high aroma that lasts long, as long as after seven rounds of brewing. The brewed tea leaves are fat, thick, and bright, with the luster seen on the silk surface.
